Tieguanyin originated in Xiping, Anxi County, Fujian Province, China, and belongs to the tradition of southern Fujian oolong. Its name literally means “Iron Guanyin,” referring to Guanyin, the Bodhisattva of Compassion.
According to one of its best-known legends, a devoted tea farmer was guided by Guanyin in a dream to discover an exceptional tea plant, whose dark, lustrous leaves were said to be as heavy as iron.
In Taiwan, however, the name “Tieguanyin” may also describe a distinctive method of making oolong tea rather than referring exclusively to the Tieguanyin cultivar. This interpretation is crafted from other cultivars using traditional Tieguanyin-style processing, followed by a heavy roast that gives the tea its characteristic depth, structure, and complexity.
The careful combination of oxidation, rolling, and roasting transforms the leaves, bringing forward rich notes of toasted grains, caramelized nuts, dark honey, and warm wood. Beneath the pronounced roasted character lies a subtle ripe-fruit sweetness that gradually emerges across successive infusions.
When brewed, the tightly rolled leaves slowly unfold, producing a clear, deep amber liquor with a full body, smooth texture, and lingering roasted character.
