In Eastern traditions, human life is not seen as separate from nature, but as part of its constant cycle of change. The idea of living in harmony with the seasons—found across Taoist thought, traditional Chinese medicine and everyday food culture—has shaped the way people eat, rest and live for centuries.
At the heart of this seasonal rhythm are the 24 Solar Terms (二十四節氣), an ancient East Asian system that divides the year according to subtle changes in sunlight, climate and the natural world.
But what does this philosophy mean in a cup of tea?
In this guided experience, FORMOSA brew explores how different styles of Taiwanese tea can accompany the changing seasons. Through tasting and storytelling, we will discover how oxidation, roasting, aroma, texture and brewing temperature can create distinctly different seasonal expressions.
Autumn Equinox 秋分
Taking place just after the Autumn Equinox, this session turns the philosophy into practice through a selection of Taiwanese teas chosen to express the transition into autumn.
At the equinox, day and night briefly return to balance. Our tasting follows this seasonal transition—from brighter, more aromatic expressions towards rounder, deeper and more mature flavours.
Tea Meets Gastronomy
The experience concludes with a curated gastronomic pairing, exploring how tea interacts with food through aroma, flavour, texture and temperature.
Rather than simply asking “What food goes with this tea?”, we will experience how pairing can reveal unexpected dimensions in both the tea and the food—sometimes through harmony, sometimes through contrast.
