This Roast Dong Ding Oolong represents one of the most iconic expressions of Taiwanese tea craftsmanship. While “Dong Ding” is often mistaken as a brand, it is, in fact, the name of a historic tea mountain in Lugu, Nantou. Its name originates from local Taiwanese Hokkien: “Dong” (凍) refers to digging or anchoring one’s toes into the soil, and “Ding” (頂) means “the peak.” The mountain’s steep, slippery slopes required farmers to climb using their toes for grip—an origin story that reflects the perseverance embedded in this tea’s identity.

Beyond its cultural roots, Dong Ding is renowned for being the benchmark of traditional Taiwanese oolong—especially in its roasted form. This heavy-roast style emphasizes depth, warmth, and a layered complexity achieved only through skilled and patient craftsmanship.

The roasting process—carried out through multiple rounds of slow, charcoal-assisted heat—requires a master tea maker to judge temperature, timing, and airflow with impeccable precision. This meticulous approach transforms the tender Qing Xin leaves into a tea rich with toasty sweetness, vibrant structure, and a soulful aroma.

When brewed, the liquor reveals a deep amber-gold clarity, carrying the warmth and elegance characteristic of classic Dong Ding roasting.
